This recipe was adapted from a great food blog – Elana’s Pantry. I didn’t have some of the ingredients that the original recipe called for, so this is my take on banana walnut muffins. I hope you like them!
Ingredients:
• 3 eggs
• ¼ cup coconut oil
• 2 medium bananas
• 3 tbsp of honey
• 10 drops stevia
• ¼ cup coconut flour
• ¼ teaspoon sea salt
• ½ teaspoon baking soda
• ¼ cup walnuts chopped
Directions:
1. Place eggs, oil, bananas, honey and stevia in a blender; blend on medium speed until combined
2. Add in coconut flour, salt and baking soda and blend until smooth
3. Scoop ¼ cup batter into a lined 12 cup muffin pan. Top with chopped walnuts
4. Bake at 350° for 20-25 minutes
5. Cool and serve
